Ciudad
South of Downtown Seattle, in the eclectic Georgetown neighborhood, Ciudad is led by Chef JD Herrera. A New Jersey native, JD moved to San Francisco at age 19 to be near his brother, a chef at Thomas Keller’s Bouchon. He attended City College of San Francisco where he received a degree in AS Culinary Arts and Hospitality Management. From 2012-2014, he was a sous chef at the architecturally historic Berkley City Club. In 2018, he took on a role as senior sous chef at Italian taverna Che Fico in San Francisco’s Nopa neighborhood and sister restaurant Che Fico Alimentari. That year, the restaurant was named a “Hot 10” winner by Bon Appetit.
JD is working Spain into the menu with moments of seasonal inspiration- think figs, Jamón Serrano ham and pistachios, and other dishes featuring ingredients like anchovies or piquillo peppers. “I grew up in a Puerto Rican household, so down the line I hope to reconnect with Caribbean cooking and the Nuevo Latino food scene that seemed to fall out of fashion.”
